I thought I’d include a little information about the powers of the mighty lentil. Not only are they cheap and easy to prepare, but they are also a nutritional heavy-weight. They are high in protein, packed with both soluble and insoluble fibre, rich in folic acid and also contain a good amount of copper, potassium and iron.
