Let’s talk about the poor old potato! It really is a very healthy food and, contrary to popular opinion, actually very low in fat and a good addition to any diet. They’re filling and satisfying as well as incredibly versatile - just check out some of my recipes Potatoes contain lots of vitamin C and impressive amounts of potassium. They are a good source of vitamin B6 as well as containing smaller amounts of the other B vitamins. And to top it all, they are an excellent source of fibre! Just remember to top your baked potatoes with healthy low-fat options such as yogurt, tuna, low-fat cottage cheese and vegetables instead of butter, margarine, sour cream or high-fat cheese.
