Here’s a simple recipe for a hot summers’ day. It’s lovely and refreshing and only takes a few minutes to prepare, although it’s tastier if you leave the yogurt and apricots mixed together in the fridge overnight… Apricot & Banana Yogurt - serves 4 125 g (4 oz) chopped dried apricots Mix the apricots and yogurt together in a bowl, cover and leave in the fridge overnight.
